Eye dropper reverting to grey

I have a problem i'm embarrassed to ask as I've probably hit something stupid..... In photoshop, whenever I pick a colour with the eye dropper, it keeps reverting back to grey. I'll double click the foreground/background swatches button and it doesn't matter what colour I choose, it keeps going back to grey. I've tried resetting the tools, shutting it down and re-opening with no luck. Feeling incredibly frustrated and stupid, please help!

Hold the bus, I just tried to open a new canvas and it was in greyscale, even though I feel like a goose, i won't delete the post so others can find it if they are a goose as well
