The Colour Conversion Step

On the Output tab, check to make sure that the Destination colour space is the correct one for the printer you're sending to.  In this example, I'm pretending that my printer expects the US Sheetfed Coated v2 profile:

Then comes the most vital step of all.  Click on "Ink Manager":

And in that window, make sure the "All Spots to Process" box is checked:

This setting ensures that all the various Pantone colours in your file are converted to the correct CMYK profile ready for accurate printing.

(If your printer hasn't given you the correct CMYK profile, this conversion won't be correct, and the printing won't be accurate.  Everything relies on your printer giving you the correct profile.)
