Swans

This is kind of camera based possibly more than editing but what is the best way to capture/edit swans? Their whiteness kills! I've seen some say underexpose, some say expose to the right to capture highlight details. All that said, how is it best to bring out the detail of the feathers editing wise when I know the details are there?
