Hi Damien just wanted to check I'm right.  If I am cropping photos to put on a disk for clients do I only ever crop at 11:15 and still check that my image is over 6 megapixels?? Is this the safest way to crop if they arnt printing at a certain size?

Correct.  When you crop to 11:15, make sure that no resolution is being imposed.  When you crop, the image shouldn't change size on screen (apart from the removal of the cropped parts, of course).

So this is right? Mum didn't want the hair in the photo I cropped to 11:15 then dragged the corner in a bit more is that ok to do? Sorry might be a stupid question but I was a little confused and i haven't done a lot of cropping.

Before you press Return to commit the crop, glance up at the Info Panel - see the H and W values there?  Multiply them to make sure they're more than 6 million, then you're good to go.
