I've had this issue alot lately.. I do want to take the class, how long would you say it takes? I'd need to take when not busy LOL

Time is irrelevant. If this is how you process raw files, you NEED to take the class.  Now.

how much time does it take because I have 40 sessions and 8 weddings to edit

If you fully commit yourself to it, you can probably knock it over in 3 or 4 days.

But must people take much longer than that.
