If you fully commit yourself to it, you can probably knock it over in 3 or 4 days. But must people take much longer than that.

Time is irrelevant. If this is how you process raw files, you NEED to take the class. Now.

For the "high resolution" ones, don't resize at all. Send every pixel your camera took. For the "web resolution" ones, yes, resize to 2048px.

Oh gee, that's SUCH a good question, and one to which there's no precise answer, I'm afraid. These will be whatever your camera took. How many megapixels is your camera? I reckon Facebook size (2048px on the long edge) would be fine for this.

It looks too dark as well. But the background edit looks fine.

Hex codes, are you nuts? Just use the RGB numbers that the info panel tells you.

Can you manually make it grey, though? Or another colour?

I don't, sorry. I just kinda brushed downwards until it smoothed out. If you shift-click on the mask thumbnail on the layer in the layers panel, you'll see what I mean.
